Smoked Jack Mackerel

Our wild mackerel is a jack mackerel sourced from Chile, and it is caught using purse-seines that minimize bycatch. We smoke it over fragrant Mediterranean bay wood and leaves, adding no other seasonings except salt and extra-virgin olive oil.
